Descent is true 3D and stereoscopic software.  You have full 3D interaction
coming from all sides: front, back, left, right, above and below you in
stereoscopic view.
There is also a number of editors where you can create your own levels.
Some of the editors have nice graphic front ends under Windows.

Actually, there is an exposion of such levels being developed.  And using
3D LCD shutter glasses or Head mounted displays the immersion is intense.
You could make a level or series of levels slanted toward your own demo.
